MARSSALA SLICES OF MEAT

Late again? Typical!!

What is in the freezer? Let’s check
Wow a few slices of meat which ought to have become milanesas .

Mmmm what else?.... great two halves of onions, another bit of red pepper left from last weeks lentels and yes, yes, yes! a small piece of garlic.

Here we go, sprinkle lots of salt and pepper on the slices then bread them with flour on both sides and place them in a non stick frying pan which I have lubricated with a bit of butter.
Let the meat seal on both sides and then remove from pan, cos… we need our wonderful pan again (I must be honest it is the only one I have so, I make the most of it!!!).
Great!! while meat has been sealing , I have been chopping all the odds and ends of onions, spring onions, and carrots, plus the only garlic piece I had in the fridge.

Once the pieces of meat are sealed on both sides, I’ve taken them out and cleaned the pan, (need to buy another soon, I know). Now it is time for the vegetables. A slice of butter and all the chopped vegetables go into the pan and directly onto the ring for about 15 minutes, don’t forget to season it with more pepper and salt.

In the meanwhile and God abiding I’ve found a bigger saucepan, almost fell of the ladder twice while getting that thing down.

Now time for everything to go together, pieces of meat plus vegetables, all go into the pan plus a cupful of water where I have dissolved a cube of concentrate broth. Caldito Knorr, vegetable flavour. After 5’ I have added half a glass of Marssala wine which I miraculously found under the sink cabinet!. Mmmmm smells great.

I’m gonna use the time time to lay the table.

Good 10’ have gone by, so now there are two final actions to go for. Number 1 add a bit of cream which I had in the fridge (luckily there is some, when I’m short I use cream cheese which is basically the same and even tastier!!!!)) and one spoon of flour diluted in warm water. This thing will thicken the sauce.

5 more minutes while the thing boils and I manage to get the kids to give up on their computers and come to dinner.

I had some mashed potatoes from yesterday which I have refurbrished with a bit of milk, butter and an egg and a little bit of grits left from midday which has accepted a gentle spoon of butter and extra cheese.

Plates display two slices of mean with two spoonfuls of mashed potatoes and grits. The sauce of the saucepan can cover both the meat and the lumps of potatoes and grits.
Dinner is over

Nothing was left in the pan. Good, it means I’ve succeeded once more in cooking with what I have and everybody has enjoyed it.
